Description

This 30 Minute Teriyaki Chicken Stir Fry is a quick, healthy, and flavorful one-pan dinner perfect for busy weeknights. Tender chicken, crisp vegetables, and a glossy homemade teriyaki sauce come together in under half an hour for a meal that’s better than takeout.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 medium carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey (or maple syrup)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • Cooked rice or noodles, for serving
  • Toasted sesame seeds and sliced green onions, for garnish

Instructions

  1. Prep the Ingredients: Cut chicken and vegetables into uniform pieces. Whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger to create the teriyaki sauce base.
  2. Sear the Chicken: Heat olive oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook until browned and fully cooked, about 5–6 minutes. Remove and set aside.
  3. Cook the Vegetables: In the same pan, sauté broccoli, bell pepper, and carrot for 4–5 minutes until tender-crisp. Stir frequently to avoid burning.
  4. Add the Sauce: Return chicken to the skillet. Pour in the sauce mixture and bring to a simmer. Stir in the cornstarch slurry and cook for 2–3 minutes until the sauce thickens and coats everything.
  5. Finish and Serve: Remove from heat and garnish with sesame seeds and green onions. Serve hot over steamed rice or noodles for a complete meal.

Notes

Prep everything before you start cooking—stir fry moves quickly. For spice lovers, add chili flakes or sriracha to the sauce. To make it low-carb, serve over cauliflower rice. Store leftovers in an airtight container for up to 4 days and reheat gently in a skillet.
