Ingredients
- Cooked rice: 2 cups
- Eggs: 2, lightly beaten
- Soy sauce: 2 tablespoons
- Vegetable oil: 2 tablespoons
- Frozen peas and carrots: 1/2 cup
- Green onions: 2, chopped
- Garlic: 1 clove, minced
Instructions
- Heat oil in a wok or large pan.
- Scramble eggs until cooked, remove.
- Add garlic and cook briefly.
- Add rice, peas, and carrots. Stir-fry.
- Add soy sauce, cooked eggs, and green onions.
- Stir-fry until heated through. Serve.
